In our community, high blood pressure runs deep. My grandmother's collards were legendary, but the salt load was punishing. This recipe preserves the soul while protecting the heart. The technique relies on layered flavor from the pot liquor and precise timing — not salt.

Fill a sink with cold water. Submerge greens completely. Swish gently to dislodge grit. Lift greens out, let water settle, repeat. Strip leaves from stems by folding in half and pulling stem away. Roll 4-5 leaves together, slice into 1-inch ribbons. Set aside.
Place turkey leg in heavy-bottomed Dutch oven. Cover with water. Bring to boil over medium-high heat. Skim foam with ladle. Reduce to gentle simmer. Add onion, garlic, bay leaves, smoked paprika, black pepper. Simmer 45 minutes uncovered.
Add greens in three batches to control volume and ensure even cooking:
Batch 1: Add 1/3 of greens. Stir to wilt (3 minutes). Batch 2: Add next 1/3. Stir. (3 minutes) Batch 3: Add final 1/3. Stir to coat. (2 minutes) Reduce heat to low. Cover pot.
Simmer covered at 82°C (180°F) for 2 hours 15 minutes. Check every 30 minutes. Add ½ cup water if pot looks dry. Greens are done when stems yield to fork without resistance. Remove turkey leg, shred meat, return to pot. Stir in vinegar. Taste. Adjust pepper if needed.
Remove from heat. Let stand 10 minutes. Remove bay leaves. Serve with cornbread and hot sauce on the side.
